Quinoa is considered a “superfood” and in the ancient Inca Empire it was known as the “mother of all grains”. I love Quinoa! What mommy would not be slightly obsessed with a grain that provides everything you need in one tiny seed and is depicted as a mother? Quinoa is definitely on my list of Mommy Rehab power foods. I began adding this perfect grain to almost every recipe. I can’t deny that preparing for a fun weekend with the family requires some extra energy.
Carrot quinoa muffins have been a huge success and I had my mother grain hiding in a yummy muffin.
½ cup sugar or less
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
3 ,18 oz baby carrot food/ fresh pureed carrots
1 ¼ cup vegetable oil/or earths balance vegan vegetable shortening
1/3 cup cooked cooled quinoa Place in cupcake baking tin lined with baking cups
350 degrees around 10-13 minutes based on size of baking cups Enjoy!
