Mommy needs Cauliflower!!
Cauliflower is a versatile vegetable. It can be prepared in so many ways served raw and cooked.
This is one of my favorite recipes, I created and I love it.

1 lb cauliflower
1 red onion
1 tbspn diced mint
3 Tbspn light olive oil, or avocado oil
1Tbspn Apple Cider vinegar
Fresh Orange Juice 1/2 navel Orange
salt and pepper to taste
